Yesterday we had the absolute pleasure of having Matt Orlando of Broaden & Build visit the brewery! Together we cooked up a full bodied stout using Cocoa and Porcini, with a light touch of smoked malt. Sounds crazy, but the flavours that these guys like to experiment with are amazing!
The aim is to recreate one of Matt’s desserts from his kitchen at Amass Restaurant . The beer will be a rich and well rounded stout with earthy tones, full umami and a sweet finish.
Once we had finished brewing we headed over to our Leeds City Tap, on Sovereign Street, where Matt collaborated with Mattia of Little Bao Boy to create some Amass inspired bao. Bringing ingredients with him from Copenhagen, they made Spent Malt Crisps with Lime and Chilli Salt, a Fried Chicken Bao with Beer Yeast Emulsion that had been fermented on Chilli and Lime, and a Deep Fried Bao with Walnut Stout, Nutella and Ginger Caramel Ice Cream. Oh yeah!
Needless to say it was a very exciting day full of great conversation, sharing of ideas and 100% decadence.
A big thanks to Matt Orlando for making the time to come over and work with us! We’re all super excited for this beer and to get it out to all of you to try! But for now we’re going to take Matt over to experience IMBC in style!
